La blanche doit sa pâleur au fait qu’elle pousse sous terre, à l’abri de la lumière. Celles qui ont des pointes violettes contiennent des anthocyanes et sont plus amères que les asperges entièrement blanches. L’asperge verte pousse au-dessus du sol; la lumière du soleil lui confère une teneur élevée en chlorophylle, un goût plus prononcé et davantage de vitamine C que la blanche.

Les asperges sont très pauvres en calories et renferment de l’acide aspartique, qui a un effet déshydratant. L’asperge verte contient deux fois plus de vitamine C et de bêta-carotène que l’asperge blanche.
